THAI STYLE FRIED RICE
1 cup of rice
1 red bullet chilli
1 tea spoon fine chopped + mashed garlic
150 grms shredded (chicken or beef or pork) protein
½ small white onion cut into strips
2 sprig spring onions
1 teaspoon each of fish sauce and soy sauce (preferably light soy)
¼ teaspoon of fine grated ginger
Salt & white pepper to taste
Pinch of sugar
Pre-boil rice. Once ready let it cool on a tray.
Meanwhile, heat up a wok or large frying pan on high heat.
Add 2-3 table spoons of oil.
Add white onions, ½ teaspoon garlic, ginger, chilli, protein of your choice, salt & pepper to taste.
Toss until cooked. Add a teaspoon of fish & soy each. Remove & keep aside.
Now add 2 tbl spoons of oil, spring onions & ½ teaspoon garlic, pre-boiled rice & toss.
Add soy & fish sauce & toss.
Finally, add the remaining protein of your choice, pinch of sugar & toss to mix.
Set aside & quickly fry 2 eggs (separate) sunny side up.
To plate, fill in two large cups with stir fried rice & turn over in the centre & top them with one egg
each. Garnish with sprig spring onions.
