PERFORMANCE TASK(S):
Individual:
Daily Journal log in Google docs, which will include accomplished tasks.
Group:
The students’ role is to renovate an old restaurant they just purchased and make it a viable
business. The Ultimate goal is to develop a google site that will display the required elements.
The group will finally present their website and ideas to a panel of judges. By brainstorming,
students will come up with the key components of a successful restaurant. Research and
classroom discussions will help lead them to some of the key components such as marketing
and advertising, management, food costs, menu offerings, budget and community involvement.
Additional evaluation aspects will be the creative and artistic elements of the restaurant name,
slogan, logo, advertising materials, floorplan, etc. In groups of 4, students will conduct research
and develop specific plans for the restaurant. The overall goal of this unit is to have the students
understand the complexities and scope of opening a successful restaurant.

Stage 3 – Learning Plan
Summary of Key Learning Events and Instruction

Day 1: The students will meet in groups of four to research the type of restaurant they want to open. They will brainstorm possibilities. The
discussions will center around Restaurant Concepts.
Day 2: The students will work in their groups to create a plan to come up with a Name for the restaurant, logo, theme, type of restaurant, menu
items. Also, the students will begin to divide the work by talents and skills. Communication skills and group dynamics will be reviewed.
Day 3: The students will begin to see a theme, ideas will begin to emerge and the plan will take form. Review of Promotional Mix elements.
Day 4: The students will submit a theme, logo, restaurant style, cuisine. Target Market Identification will be reviewed.

Day 5: The students will begin to plan the layout for their restaurant. They will first brainstorm the possibilities and then begin to create the interior
design. Market trends and customer behaviors will be reviewed.
Day 6-10: The students can use a variety of methods to convey their action plan. These include a movie, slide show, webpage, newsletter, or an
online poster.
