WHY DOES IT TASTE SO BITTER?
No need to yell, I’ve got the answers.
The bitterness comes mainly from the Gentiana lutea root. As described, this is an bitter and
sialagogue (increases the flow rate of saliva), specifically beneficial for digestive health*.
It is recommended to have a weak infusion of the tea at first, and increase as necessary. If
the taste is too strong, reduce the amount to ½ teaspoon per teapot and infuse for 1 minute
only, then sweeten with some honey.
