cooking temperature before frying or boiling foods. Keeping lid ON during pre-heating
and cooking cycles will reduce heating time and keep temperature more consistent.

14 POUNDS is the LARGEST recommended turkey to cook. Any turkey over 14
pounds may not cook completely, especially in center of breast and drumstick.
When cooking more than one turkey, or more than one basket of food, allow
enough time for the oil or water to re-heat to designated temperature before adding
additional food.

WARRANTY INFORMATION
Masterbuilt warrants its products to be free from defects in material and workmanship
under proper assembly, normal use and recommended care for one year from the date
of original retail purchase.
Masterbuilt warrants stainless steel products and components to be free from defects in
material and workmanship under proper assembly, normal use and recommended care
for five years from the date of original retail purchase.
Masterbuilt warranty does not cover paint finish as it may burn off during normal use.
Masterbuilt warranty does not cover rust of the unit.
Masterbuilt requires reasonable proof of purchase for warranty claims and suggests that
you keep your receipt. Upon the expiration of such warranty, all such liability shall
terminate.
Within the stated warranty period, Masterbuilt, at its discretion, shall repair or replace
defective components free of charge with owner being responsible for shipping. Should
Masterbuilt require return of component(s) in question for inspection Masterbuilt will be
responsible for shipping charges to return requested item.
This warranty excludes property damage sustained due to misuse, abuse, accident,
damage arising out of transportation, or damage incurred by commercial use of this
product.
This expressed warranty is the sole warranty given by Masterbuilt and is in lieu of all
other warranties, expressed or implied including implied warranty, merchantability, or
fitness for a particular purpose.
Neither Masterbuilt nor the retail establishment selling this product, has authority to
make any warranties or to promise remedies in addition to or inconsistent with those
stated above.
Masterbuilt’s maximum liability, in any event, shall not exceed the purchase price of the
product paid by the original consumer/ purchaser. Some states do not allow the
exclusion or limitation of incidental or consequential damages. In such a case, the
above limitations or exclusions may not be applicable.
California residents only: Not withstanding this limitation of warranty, the following
specific restrictions apply; if service, repair, or replacement of the product is not
commercially practical, the retailer selling the product or Masterbuilt will refund the
purchase price paid for the product, less the amount directly attributable to use by the

WARNING IMPORTANT SAFEGUARDS
When using electrical appliances, basic safety precautions should always be
followed, including but not limited to the following:

Read all instructions
1. Never move appliance when oil or water is above 100°F.
2. Do NOT touch hot surfaces. Use handles and knobs.
3. To protect against electric shock, DO NOT immerse cord, plugs, or any part of the
control panel in water or other liquids.
4. Do NOT move appliance while in use or HOT.
5. This is an ATTENDED appliance. Do NOT leave this appliance unattended during
use. Even after use, never allow children or pets near appliance. Heated liquid
inside cooking pot remains dangerously HOT for a period of time after use.
6. Close supervision is necessary when appliance is used near children. Do NOT let
children handle or put cord in mouth.
7. ALWAYS keep children and pets away from appliance.
8. Unplug from outlet when not in use and before cleaning. Allow to cool before
removing parts for cleaning and storing.
9. Do NOT operate appliance with a damaged cord, plug, or after appliance

20. Do NOT immerse electric cord or control panel in water. STEAM

GETTING READY

RECIPES
Fried Whole Turkey (Turkey Mode)
(Maximum recommended Turkey weight is
14 lbs!) Allow turkey to reach room
temperature or set out one hour before
frying. Insure that turkey is completely
thawed, free of ice and water. Remove
neck, giblet bag, and leg ties. Pay special
attention to inner cavity area.
Fill inner pot with oil to fill line.
Select Turkey Mode on Digital Control.
Push Start Button and unit will begin
heating. Oil may take 50 to 60 minutes to
reach cooking temperature. Unit will beep
when cooking temperature is reached.
While oil is preheating, prepare turkey.
Inject your choice of marinade evenly
throughout bird. Season outside of bird with
spices or rub to your liking. Place turkey
horizontally in basket, breast side up. See
inset. When unit has reached cooking
temperature, push the Time Button. Enter
weight of turkey to be fried.
Using Up and Down buttons
adjust until weight of turkey is
displayed in LCD. Timer will automatically
calculate correct cooking time based on the
weight you entered.
(See page 14 for manual calculation.)
Place turkey in oil. Wearing protective
gloves or mitts, hook the basket handle with
the lifting hook and very slowly lower basket
into hot oil. With basket in place cover with
lid.
CAUTION: Steam from vent holes in lid
may cause burns.
Push Start Button and timer will begin
counting down.
Unit will beep five times when timer has
reached 00:00. Turn unit OFF.
NOTE: Cooking conditions vary. Insert a
food thermometer 21/2 inches in deepest
part of turkey to make sure internal
temperature of is 180° is reached.
Lift basket from hot oil slowly, hooking
basket to the side of pot with drain clip (See
Page 6).
The turkey can remain in the basket to cool
until ready to serve. A small amount of oil
may be inside cavity.

Remove from basket and drain on paper
towel before carving.
Dismantle appliance for cleaning before
initial use. Once unit is cleaned and
properly assembled, it can be used for
frying, boiling and steaming.

Fried Turkey Breast (Turkey Breast
Mode)
Follow directions and safety tips for Whole
Turkey Recipe using Turkey Breast Mode
and time. (Cooking time for Turkey Breast
and Whole Turkey are different.)

Clean the lid, inner pot, and basket with a
damp cloth or sponge using a mild
detergent. These parts can also be
cleaned in the dishwasher.

Thawing Turkey
The National Turkey Federation
recommends refrigerator thawing and to
allow approximately 24 hours for every five
pounds of bird thawed in refrigerator.

Rinse and dry thoroughly.
These parts can also be cleaned in the
dishwasher.

Fried Catfish
2 cups fine wheat flour
1 tablespoon baking soda
1 teaspoon baking powder
1 teaspoon Old Bay seasoning
1 teaspoon salt
1 teaspoon pepper
6 (10-ounce) fresh fillets (Catfish)
Combine flour, baking soda, baking
powder, Old Bay, salt, and pepper.
Preheat to 350°F. Batter fish and gently
submerge in oil. Deep-fry until golden
brown and cooked through, about 4
minutes, turn to ensure even browning.
Do not stack fish. Position in single layer.
Low Country Boil (Boil/Steam Mode)
1 lb. shrimp
1 lb. crawfish
2 lbs. smoked sausage (1/4” thick slices)
8-12 pieces of short ear corn
2 bags of crab boil mix
2 lbs. of whole new potatoes
Fill pot with water. Add 2 bags of crab boil
mix to the pot and bring water to a boil.
Allow water to boil for 15 minutes then
add sausage 12 minutes later add corn.
8 minutes later add potatoes.
7 minutes later add shrimp and
crawfish together. Cook another 3
minutes remove and serve.

Clean Outer shield, cord, control
panel and element with a damp
cloth or sponge using a mild
detergent. Never clean cord, and
control panel in the dishwasher.
Dry thoroughly before using.

Panel. Once mounted to Mounting Bracket the
Control Panel will turn ON.

Once unit is properly assembled, it can be used for frying, boiling and steaming.

CAUTION: While cooking, Hot Steam is produced
and will escape through vent holes in the lid and
around the lid. Burns may occur if skin comes in
contact with Hot Steam. Use caution when opening
lid and operating Control Panel.

FREQUENTLY ASKED QUESTIONS (con’t)
What type of oil should I use?
Peanut oil is recommended because of the great taste and higher smoke point but any
common cooking oil may be used.
How hot will the oil become?
Oil will reach 400° in approximately 55 minutes.
Oil temperature will decrease to 275°- 280° when turkey is placed in fryer, which is an
appropriate turkey frying temperature.
How do I clean my Turkey Fryer?
Use a common dish detergent to clean the unit. Use unit to heat warm soapy water.
Unplug unit from wall; then wipe basket, inner pot and element. Rinse and dry. For a
longer element life, clean element after each use.
Should I keep the lid on during use?
Yes, the lid helps retain heat, and keeps splatter inside unit
What size turkey can I deep-fry in this unit?
You can deep fry up to a 14 lb. Turkey in this unit.
May I use an extension cord with this unit?
No, extension cords naturally have a loss of electric current,
resulting in increased cooking time and decreased performance.
Extension cord can also pose a trip hazard.
Do you put the turkey breast up or down?
Turkey should be placed horizontal in basket, breast side up.
How long do I fry a turkey?
(See page 15 for complete Turkey Frying Recipes)

RESET FUNCTION
Your appliance is equipped with an overheat
safety feature.
If appliance overheats it will shut off
automatically.
To reset appliance, unplug from outlet, press
reset button (located on the back of Control
Panel) with finger.

I followed the formula and my turkey is not cooked. What is wrong?
Cooking conditions may vary. Turkey could have been cold. Bring turkey to room
temperature before frying. Sometimes a cold or frozen spot in a joint or deep in turkey
breast does not allow this section to cook properly.
Is it okay to use indoors?
Electric Turkey Fryers are for indoor use only.
Propane Turkey Fryers are for outdoor use only.
Is it okay to use my Turkey Fryer outdoor?
Outdoor use is not recommended for our Electric Turkey Fryer.
If you do not want to use the unit in your house please use in a garage or covered
patio to prevent Electric Turkey Fryer from being exposed to rain showers.

damaged if heated while empty.

Step 10. When time has expired unit will beep. Display will show liquid temperature.
If additional time is desired repeat steps 5 & 6. Time will begin counting down. DO NOT
PRESS START BIUTTON.

CAUTION: Hot when in use.

Step 11. Use lifting hook to lift basket out of unit. Hook basket on side of pot to drain
using attached drain clips.
When cooking is complete turn unit off and unplug unit from outlet.
CAUTION - Element will not shut off when timer reaches 00:00. Element will continue
heating until temperature of liquid has recovered.

CAUTION: Do not overfill pot past fill line. If
over filled, boiling oil or water may overflow
during use and cause severe injury.

THINGS TO KNOW ABOUT YOUR DIGITAL CONTROL UNIT
Pushing the START button once while timer is in operation will display the desired
cooking temperature. Heating will stop.

CAUTION: Never use unit with less than two
gallons of oil when frying.

Pushing the START button twice while timer is in operation will display the actual liquid
temperature. Heating will restart.

CAUTION: Do not mix different types of oil at
the same time.

CAUTION If the START BUTTON is pushed three times while timer is operating, timer
will stop counting down and reset back to original desired time.

CAUTION: Never melt fat or lard on the
heating element or in basket.

At any point while the unit is operating, the LCD (liquid crystal display) can be
illuminated for better visibility by quickly pressing the ON/OFF button once.
Pushing and holding down the ON/OFF button for three seconds will turn unit OFF.

USING DRAIN CLIP BASKET
WARNING:
Wear gloves or mitts when
lowering or removing basket
from hot liquids.

Water typically boils at 212 degrees Fahrenheit. This can change a few degrees
depending on several external factors such as altitude or relative humidity.
Because water boiling temperature is relatively constant and can never be exceeded,
cooking temperatures above that can never be reached. Therefore, unit will never say
"Ready". When water boils, you are ready to cook.

Allow excess oil or water to
drain by hooking basket on
the inner pot with drain clip.

The Digital Control Panel (DCP) has preprogrammed temperature set points built-in, to
take the guess work out of calculating cooking temperatures for turkey, turkey breast
and Boil & Steam.

It is best to season deep
fried food immediately after
frying.

The heating element has a built in tolerance it's possible for your controller to read
slightly more or less than the displayed temperature.

FREQUENTLY ASKED QUESTIONS
My turkey fryer will not turn on!
The Control Panel features a “Safety Switch” that must be aligned properly for unit to
power on. Red light will illuminate. (See Control Panel Attachment on page 5.)
How much oil do I need to use?
Fryer will require approximately 2¾ gallons oil
The fill line is the maximum amount of liquid that can safely be used in this unit.
Filling to the line provides more than enough water or oil to prepare any dish in this
unit.

Turn appliance off, unplug and let
cool for 2 hours if using water, 5
hours if using oil before cleaning
or storing.

(Using the timer is optional.)
NOTE:Timer may be started at any time during or after heating has completed.
Step 3: Push Time button. Display will read 00:00.
Step 4: Using the Up or Down buttons, scroll up or down until desired cooking time is
displayed.
Step 5. Place food in basket.
Step 6. Wearing protective gloves or mitts, hook the basket handle with the lifting
hook and very slowly lower the basket into hot water.
Step 7. Push Start button. Timer will begin counting down.

SECTION 4 MANUAL MODE
ELEMENT

When appliance is not in use, it must be
unplugged from power supply.

Step 8. When time has expired unit will beep. Display will show water temperature. If
additional time is desired repeat steps 3 & 4. Time will begin counting down. DO NOT
PRESS START BIUTTON.

(Manual Mode is used for frying foods at a lower temperature or simmering Soup and
Stews.)

Step 1: Make sure MANUAL mode is selected. (LCD will display "MANUAL").
Step 2: Using the Up or Down buttons, scroll up or down until desired cooking
temperature is displayed.

OIL AND WATER REMOVAL
Step 3. Push Start button. LCD will flash “Heating” indicating unit is heating.
Depending on selected cooking temperature, this can take up to 60 minutes to reach
cooking temperature. Use this time to prepare food.Unit will beep and flash ” READY”
when cooking temperature is reached. This will only occur when using oil not water.

CAUTION: Do not pour used oil in the sink.
Drain it into an oil container.
POUR SPOUT

(Using the timer is optional.)
NOTE Timer may be started at any time during or after heating has completed.
Step 5: Push Time button. Display will read 00:00.

ATTENTION: Not all models are equipped with Drain Valve or Drain Hose.

Step 1: Make sure TURKEY BREAST mode is selected. (LCD will display "TURKEY
BRST").

These items are optional features based on Retail Store where purchased.
(See packaging for details)

Step 2: Push Start button and LCD will flash “Heating” indicating unit is heating. This
mode is preset to 400°. Oil will take approximately 50 to 60 minutes to reach cooking
temperature. Use this time to prepare food. Unit will beep and flash ” READY” when
cooking temperature is reached.
(Using the timer is optional.)
Step 3: Push Time button. Display will read 03.00 and flash, “Enter Weight.”
Step 4: Using the Up or Down buttons, scroll up or down until Turkey weight of the
turkey brst to be fried is displayed. Always round up to next whole or half pound.
(example: 6.35 lbs to 6.5)

Drain Valve (Optional)

Step 5. Place thawed turkey breast in basket.

Align drain valve spout over
container and drain.

Step 6. Wearing protective gloves or mitts, hook the basket handle with the lifting
hook and very slowly lower the basket into hot oil. and cover with lid.

Close valve when complete.

Step 7. Push Start button. Timer will automatically calculate required cooking time and
begin counting down. To view Temperature while timer is ON press Temp Button once
to display. After 5 seconds time will reappear. NOTE: Cooking time for a whole turkey
and turkey breast are different. See pg 14 for cooking time.

Do NOT store liquids in appliance.
Oil can be stored in sealed
container after cooled.

Step 8. When time has expired unit will beep. Display will show oil temperature.
Stpe 9. Use lifting hook to lift basket out of oil. Hook basket on side of pot to drain
turkey using attached drain clips.
CAUTION - Element will not shut off when timer reaches 00:00. Element will continue
heating until temperature of liquid has recovered.

SECTION 3 BOIL/STEAM MODE
Step 1: Make sure BOIL/STEAM mode is selected. (LCD will display "BOIL/STEAM").
Step 2: Push Start button. LCD will flash “Heating” indicating unit is heating. This
mode is preset to 250°. Water will take approximately 50 to 60 minutes to begin
boiling.
Use this time to prepare food. (Water will never reach 250° and unit will not beep.)
Cooking may begin when water boils.

Spout for easy removal of
COOLED oil or water.

Why preset to 250°? This mode set to 250° so that the unit will not cycle ON and
OFF. If set to low, water may not Boil or Steam. (See page 13 for more details.)
