The Egg Came First!

Scrambled Eggs for two

INGREDIENTS
6 Farm fresh organic eggs
3 TBS Light cream
1 TBS Unsalted Butter
1" slice of goat cheese
Fresh Chives
In a medium bowl, crack all eggs, add light cream and whip. Add butter to a hot non-stick skillet. Once skillet is
hot and butter stops foaming, add egg mixture and WAIT! Let the eggs fluff up for a minute before you scrape
the bottom and sides of the pan. Once the eggs are half way done, add goat cheese. Gently fold the cheese into
the eggs. Turn off the heat when they're still a little wet. DO NOT OVERCOOK! Transfer to plates and top with fresh
chives.

Crispy Fried Eggs
INGREDIENTS
3 Farm fresh organic eggs
1 TBS Extra virgin olive oil
Salt & pepper to taste
Optional: Garlic powder or herbs de provance

Heat a medium non-stick skillet on high with EVOO. Once the oil is hot, crack
eggs directly into the pan. Let the oil bubble and get the edges of the egg crispy.

For sunnyside up, transfer to a plate when cooked.
For over easy, flip and quickly transfer to a plate.
For over medium, flip wait a few seconds and transfer to a plate.
*Excellent on top of a burger or salad!

Em's Favorite Frittata
1 dozen Farm fresh organic eggs
1 ½ cups milk (non-dairy is fine)
1 big pinch salt & pepper
1 pkg Alexia Sweet potato puffs
1 small sweet onion
1 ½ cups chopped broccoli (cooked or thawed if frozen)
1 pkg Applegate Natural Chicken and Sage Sausage (thawed)
½ cup shredded sharp cheddar cheese
Preheat oven to 425°. Place all potato puffs in a
single layer into a large greased casserole dish(or
muffin tin, cook 20 minutes. Meanwhile, in a large
bowl, whip up eggs, milk, and salt and pepper and
set aside. Chop onion, broccoli, and sausage.
Remove potato puffs from the oven and press
them flat to form a crust on the bottom of your
casserole dish. Pour egg mixture on top evenly.
Top with veggies and sausage. Top with cheese.
Adjust oven to 350° and bake until center is
slightly firm, about 30 minutes. Serve warm! Enjoy

Hard Boil (like a boss!)

INGREDIENTS
Farm fresh eggs, any quantity

Put the uncooked eggs into an empty pot. Fill the pot with water enough to cover
the eggs. Cover the pot and boil the water. Once water is boiling, set a timer for
12 minutes (less for soft boiled). While the eggs are boiling, fill a medium size
bowl with ice water and a pinch of sea salt. Once timer goes off, strain the eggs
and IMMEDIATELY submerge into the ice water. WAIT 10 minutes then peel!
