What the tool actually does
Metadata is not the file name
They are two separate things. Renaming a file on your disk changes nothing inside it: the title, the author and the software stay where they are, and they are what a search tool reads. This is where you change them.
What is in there is often a surprise
A document exported from a template usually carries the name of whoever built the template, the name of the original file, and sometimes a subject nobody wrote on purpose. It is worth reading before a document leaves your organization.
Clearing the fields is the first step of anonymizing
Emptying these fields removes what is written in them, and nothing more. A PDF can also carry annotations, layers, hidden text and revision traces. If a document really has to be scrubbed, the metadata is the first step of a longer job.
